Since my daughter was diagnosed with a wheat and gluten allergy I have been experimenting with various recipes to help her with her diet.As of yet I have not been very successful with the bread but she has now decided that she is better off with out any at all.I have had a lot of success with sausages though ……..
I thought I would collect a few recipes together that don’t need flour at all.It always seems a shame when you come across a decent recipe just to find because you have an allergy you can’t eat them.They would also be helpful to family members they won’t need to leave you out when baking for the family
One of the quickest and most simple dishes to make is gluten-free pasta tossed in a little fresh pesto with parmesan freshly grated on top – delicious! Polenta is also wonderful for coeliacs and can be used in a number of ways – either serve it soft with a delicious stew or sauce, or pour it into a swiss roll tin and allow it to set. When it’s set, cut it into slices and chargrill – it’s great to have as a starter, just like bruschetta, with a number of toppings such as roasted peppers or tapenade.
